Well after a whole week of craving banana bread/muffins I finally settled down to making myself some today. I found a basic recipe online this morning, then added and changed ingredients to my liking. I also added some pineapple, cause yesterday I noticed there is a whole bowl full of pineapple pieces in the freezer……so…….pineapple, banana, nut muffins it is. Nuts, well because muffins just aren’t muffins without nuts. I also personally like adding cinnamon and spices of that sort to my muffins, it isn’t a requirement though but if you don’t mind those flavors, by all means, add those spices dear.

By the way, there are so many possibilities when it comes to making different flavored muffins. I always change recipes, adding this or that, changing it to this fruit or that one, the combinations are endless, and it’s always great when they come out delicious.

And here is the recipe…..

Banana Pineapple Nut Muffins

1/2 cup oil, or butter

1 cup sugar

2 eggs, beaten

4 bananas, finely crushed

1 cup chopped pineapple

1 cup chopped nuts (walnuts or pecans) (reserve 1/4 cup for topping)

2 cups flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon vanilla

1 teaspoon cinnamon (optional)

Directions:

1. Mix together oil and sugar (for butter, cream together butter and sugar).

2. Add eggs, crushed banana, chopped pineapple, and 3/4 cup nuts. Combine well.

3. Mix together flour, soda, salt, and cinnamon, add to creamed mixture. Add vanilla. Mix well.

4. Pour into lightly greased muffin tins 1/4 from top.

5. Sprinkle with 1/4 cup reserved nuts.

6. Bake at 375* for 15 to 20 minutes or until golden brown.

7. Eat your heart out.

Extra tips: You can omit the pineapple if you don’t fancy it, or don’t have any available at the moment. But if you do, lessen the flour to 1 1/2 cups instead of 2 cups. The nuts are also optional, you don’t have to change the recipe if you omit those though. If you don’t care much for muffins, you can make this recipe into a loaf, just lightly grease a loaf pan and pour the batter into that instead. Bake it for 60 minutes, or until golden brown, if you’re making a loaf.
